Much of what I have copied is from the version of this article as it was in Wikipedia on November 18, before alterations were made by an ignorant editor who did not understand the role  of nucleation in the thermal hysteresis of water. He deleted the best reference on the subject (which is still absent in Wikipedia) and deleted the entry on thermal hysteresis confusing it with anti-freeze proteins.
